In the Little House books, everyone thought refined white bread was the best. And in the Long Winter they had to eat brown bread as it was the only thing really available to them. It shows they didn't know. Plus with the potato skins you could feed it to the chickens or use it in the garden to make the soil richer.

My great-grandparents never used the skins either. Remember that during the Great Depression, not many folks were aware of (or cared about) vitamins and fiber. Filling the belly was what counted, and scraps like potato skins were still used--but to feed animals.

Aren't many vitamins wasted by discarding the potato skins? I would have thought in those days every scrap was critical!

please give us more recipes..these are great recipes esp. now with all the instant food/fast food alot of ppl eat...this shows you that it's easy to make fast, simple and healthy meals with basic ingredients
