First a drip pan is a pan plased under the meat to catch the "drippings" usually on the level below the grill surface. Adding the sauce is an individual thing but most of us put it on after the smoking, so the sugars in the sauce do not burn or "carmalize' on the meat. I but mine on at the end and let it heat on the grill or smoker for about 5 minutes to heat up.
