hundreds of takes of horses jumping over fences etc were filmed (35mm) in front of bluescreen. They were filmed at high speed and at all different angles. The compositors then had the freedom to choose which takes were to be used and how much they sped them up by. Most of the bluescreen compositing was done using a program called Cineon, which is now defunct. There were also some water spray elements filmed and some water spray elements rendered in 3D. hope that answers your question.
